Brinjal Fry




Brinjal is a king of vegetables. It has multiple benefits and weight management is the main factor in all those. Brinjal Fry is a stir fry, easy to make and tastiest too.

Servings - 2
Preparation time - 15 mins 

Ingredients:

Brinjal - 1 cup
Coconut oil - 3 tbsp
Mustard seeds - 1/4 tbsp
Cumin seeds - 1/4 tbsp
Chopped onion - 1
Curry leaves - 1 sprig
Green Chilli - 4 split
Ginger Garlic paste - 1/2 tbsp
Curry masala - 1/2 tbsp
Turmeric Powder - 1/2 tbsp
Red Chilli powder - 1/2 tbsp
Grated coconut - 1 small cup
Salt - 1 tbsp

Directions:

Step 1: Heat the pan and pour the oil.


Step 2: Once the oil gets heated add mustard seeds and cumin seeds.


Step 3: Add Chopped onions, curry leaves, and green chilies.


Step 4: Now add ginger garlic paste and saute it well.


Step 5: Add Turmeric powder, curry masala, and red chili powder.



Step 6: Now add chopped brinjals and add salt then saute well.


Step 7: Cover the pan and let it cook for 5 mins in a medium flame.


Step 8: Once the brinjals turn to brown switch off the flame and let it cool for a couple of minutes then add grated coconut and mix well.



Now the yummy and delicious brinjal curry is ready to serve.
