Brinjal Fry
Brinjal is a king of vegetables. It has multiple benefits and weight management is the main factor in all those. Brinjal Fry is a stir fry, easy to make and tastiest too.

Preparation time - 15 mins
Ingredients:
Coconut oil - 3 tbsp
Mustard seeds - 1/4 tbsp
Cumin seeds - 1/4 tbsp
Chopped onion - 1
Curry leaves - 1 sprig
Green Chilli - 4 split
Ginger Garlic paste - 1/2 tbsp
Curry masala - 1/2 tbsp
Turmeric Powder - 1/2 tbsp
Red Chilli powder - 1/2 tbsp
Grated coconut - 1 small cup
Salt - 1 tbsp
Directions:
Step 8: Once the brinjals turn to brown switch off the flame and let it cool for a couple of minutes then add grated coconut and mix well.
