Ash Gourd Kootu is a side dish which can be served with rice. A full meal will not be complete without the Kootu. When it comes to Kootu Ash Gourd is the choice of everyone. White Pumpkin gives you the best taste. It also has lots of health benefits. Mainly it helps in reducing weight. Nowadays overweight is a big problem among many people. Those who wish to maintain or reduce the weight must concentrate on their diet. Ash Gourd\white pumpkin helps to reduce the weight. It is low in calories, it is an ideal vegetable for diabetic patients. If you take ash gourd\pumpkin juice in the empty stomach, then you can notice the changes in your body weight.


It helps in treating Purpura. It is an important ingredient in various Ayurvedic medicines for treating bleeding disorders and helps in improving body weight and is ideal for diabetic patients, helps in combating general debility and treats mental disorders by stabilizing nerve cells. It also acts as an Antidiarrheal agent and provides relief from constipation. In case of a burn, topical application of Ash Gourd pulp is also highly beneficial.


Ash gourd Kootu can be done by moong dal or with chana dal. You can use either moong dal or chana dal. Here I used chana dal. It is an easy procedure to make an ash gourd Kootu. Boil the chana dal and ash gourd separately. The boiling capacity of both is varied, so you have to boil it separately. Make a paste using coconut, green chili, and cumin seeds. Add it to the pumpkin and add season ingredients.

Preparation Time - 10 Minutes
Cooking Time - 15 Minutes


Ingredients:


Ash Gourd Chopped - 1 cup
Chana Dal - 1/4cup
Grated Coconut - 1/2 cup
Raw Rice - 1 tbsp
Turmeric Powder - 1/2 tbsp
Cumin Seeds - 1 tbsp
Green chili - 2
Oil - 1 tbsp
Mustard seeds- 1/2 tbsp
Onion - 1 tbsp
Curry Leaves - 1 sprig
Salt to taste


Procedure:



Step 1: Peel the skin and remove the seeds from the pumpkin. Chop them into a medium size piece.
Step 2: Add some water in a pan and add chopped pumpkin. Let them boil for 5 minutes.
Step 3: Wash and add the chana dal in the other pan. Add some water and let it boil for 10 minutes. Make it cooks completely.
Step 4: In a mixer jar, add grated coconut, rice, green chili, and cumin seeds. Grind them into a fine paste.
Step 5: Once the Pumpkin and chana dal is cooked, add the chana dal to the pumpkin. Then add the ground paste and turmeric powder to the pan. Mix them well. Let it cook for 2 to 3 minutes again. Let it cook until the raw aroma goes away.
Step 6: Heat oil in a pan and add mustard seeds, onion, and curry leaves. Let them splutter and add it the pumpkin kootu. Mix it and serve.
