Preparation Time - 10 Minutes
Cooking Time - 30 Minutes
Ingredients:
Ash Gourd - 3 to 4 pieces(2 cups grated)
Sugar - 1 cup
Ghee - 4 tbsp
Cashews - 10
Cardamom powder - 1 pinch
Food color Powder - 1/2 tbsp
Procedure:
Step 1: Cut the ash gourd into pieces and remove the skin and the seeds. Grate the pumpkin.
Step 2: Strain the water from the grated pumpkin. Do filter it.
Step 3: In a pan heat 1 tbsp of ghee and add cashews. Roast them and transfer it to a bowl and keep it aside.
Step 4: In the same pan add 2 tbsp of ghee and heat it. Then add grated pumpkin and cook well. Cook for 10 to 15 minutes in a medium flame. Cover it with a lid.
Step 5: Add cardamom powder and mix well.
Step 6: Once it cooked almost, add sugar and let it dissolves completely.
Step 7: Add color powder and mix well. Let it cook for 2 minutes.
Step 8: Add the remaining ghee and let the ghee segregate from the halwa.
Step 9: Finally, add roasted cashews and mix well. Tasty Kasi halwa is ready to serve.
