Vegetable Idli Recipe
Vegetable Idli!! Idli is popular as breakfast foods throughout India. It is the most traditional and healthy breakfast in Tamilnadu. Vegetable idli is the variety of idly. We can make lots of variety in idli. The batter is prepared using rice and urad dal.
Plain idlis are mild in taste, so when you are bored with plain idli just go with this yummy and colorful variety of idly. Idlis are often served with sambar. Idlis are also frequently served with chutney, kaara chutney. The dry spice mixture podi is also the best combination for idli.
For vegetable idli, you can take any chutney sambar as your side dish.

Cooking Time - 15 Minutes
Ingredients:
Idli batter - 2 cup
Chopped Onion - 1/4 cup
Chopped carrot - 1/4 cup
Chopped beans - 1/4 cup
Chopped Potato - 1/4 cup
Green chili - 1
Curry leaves - 1 sprig
Oil - 1 tbsp
Mustard seeds - 1/4 tbsp
Salt to taste
Directions:
Step 1: In a pan heat oil, then add mustard seeds. Let them crackle.
Step 2: Then add chopped onion, curry leaves, green chili and saute well until the onions turn light brown.
Step 3: Now add all other chopped vegetable and salt. Saute them well. Make it cook until the vegetables fried well.
Step 4: Transfer the fried vegetables into the batter bowl and mix well.
Step 5: Take the idly maker and add water for steaming and pour the batter into each hole on all plates.
Step 6: Cover the pan with a lid and cook for 10 to 15 minutes. Then switch off the flame and take out the idly carefully.
The tasty yummy and colourfull vegetable idly is ready to eat. Serve it with sambar or any chutney. The fried vegetables give you the best taste. You can make this vegetable idly for your kid's lunch box also.
