Brinjal curry\Ennai Kathirikai Kuzhambu is my all time favorite dish. It can be done in two ways. One is by grinding the ingredients. Here I did another method, it requires only less time. Results tasty. This method is just making fry. You just need Brinjal, tamarind, onions, garlic, and tomato as the main ingredient. Though it is Kuzhambu variety, it is so simple to make. You will get a thick curry as in result. It is a spicy brinjal curry. If you don't like the spicy then, you can adjust it for your taste.

Here I have explained how to make a Brinjal curry\ennaikathirikai Kuzhambu recipe\Brinjal kuzhambu recipe with a step by step process with a clear photo.


Servings - 3
Preparation Time - 10 Minutes
Cooking Time - 15 Minutes

Ingredients:


Brinjal - 6
Tamarind - 1 lemon sized
Tomato - 1
Small onion - 1 cup
Garlic cloves - 1/2 cup
Sesame Oil - 5 tbsp
Mustard seeds - 1/2 tbsp
Cumin Seeds - 1/2 tbsp
Fenugreek Seeds - 1/2 tbsp
Pepper - 1/2 tbsp
Urad Dal - 1/2 tbsp
Chana Dal - 1/2 tbsp
Curry Leaves - 2 sprig
Red Chili - 3 to 4
Kuzhambu Chili Powder - 3 tbsp
Turmeric Powder - 1/2 tbsp
Jaggery powder - 1/2 tbsp
Asafoetida - 1/4 tbsp
Salt To taste 

Procedure:


Step 1: Wash the brinjal and make a cross cut in both sides. And soak the tamarind in some water for 10 minutes.
Step 2: Heat oil in a pan and add the brinjal. Let it fry for 5 to 6 minutes in a medium flame. Once it cooked well then take out. 
Step 3: Oil will remain in the pan. So in the same pan add mustard seeds, urad dal, chana dal, pepper, fenugreek seeds, cumin seeds. Let them fry for a minute.
Step 4: Now add chopped onion, curry leaves, and red chili. Saute well for a minute.
Step 5: Add sliced garlic cloves and make them cook well. 
Step 6: Add Salt and asafoetida and mix well.
Step 7: Now add chopped tomatoes and make it fry until they soften.
Step 8: Add Turmeric powder and Kuzhambu chili powder. Mix well and leave it for a minute. 
Step 9: Filter the pulp from the soaked tamarind and add it to the pan. Let it cook for 5 minutes. Let the oil segregated from it.
Step 10: Finally, add fried brinjal and jaggery. Mix well and cook for 2 minutes in a low flame.  

Directions:
