It is a very easy simple pulao garnished with nuts, raisins. The added saffron and nuts will take you to the next level of tatse. The Kashmiri Pulao is prepared with Basmati rice. Cook the Basmati rice in a pot, so that you can get the nonsticky rice.
While cooking the basmati rice add a tbsp of oil and a little salt. It will help to cook the rice nonsticky. Here I have explained how to make a Kashmiri Pulao Recipe with a step by step procedure with a clear photo.
Preparation Time - 5 Minutes
Cooking Time - 40 Minutes
Ingredients:
Basmati Rice - 1 cup
Oil - 1tbsp
Sliced Onion - 2
Sugar - 1 tbsp
Mint leaves - 10
Green chili -2
Ginger - 1 piece
Ghee - 6 tbsp
Bay leaf - 1 or 2
Cloves - 3
Cardamom - 3
Cinnamon stick - 1
Peppercorn - 5
Cumin Seeds - 2 tbsp
Cumin powder - 1/2 tbsp
Almond - 10
Cashews - 10
Walnuts - 10
Raisins - 15
Saffron - 1 pinch
Salt to tatse
Procedure:
Step 1: Boil 3 to 4 cups of water and wash and add the Basmati rice to water. Add tbsp of oil and a little salt while cooking the rice.
Step 2: Once the rice is cooked, strain the water and keep the boiled rice aside.
Step 3: In a pan add ghee and heat. Then add sliced onions and sugar. Saute it until the onion becomes brown in color.
Step 4: Once the onion changed to brown transfer it to the bowl.
Step 5: In the same pan add bay leaf, cloves, cinnamon, peppercorn, cumin seeds, cardamom and fry well.
Step 6: Now add chopped ginger, green chili, nuts and saute it well.
Step 7: Then add mint leaves and fry for a minute.
Step 8: Add saffron, cumin powder, and salt. Stir it for 30 sec.
Step 9: Add boiled rice and mix gently without breaking it.
Step 10: Finally, add fried onion and mix well. Now the tasty and yummy Kashmiri Pulao is ready to serve.
